Ingredients

  • 4-6 Skinless Cod Fillets
  • 1 Cup All-Purpose Flour
  • 1 Cup Corn or Potato Starch
  • 1 TSP Paprika
  • 1 TSP Garlic Powder
  • 1 TSP Onion Powder
  • 1 TSP Creole Seasoning
  • 1 TSP Cayenne Pepper
  • 1 TSP Black Pepper
  • 1/2 TSP Salt
  • 12 OZ Bottle of Beer Or Soda Water
  • 4-6 Brioche Buns optional, serving suggestion
  • Lettuce optional, serving suggestion
  • Tomato optional, serving suggestion
  • Cheddar Cheese optional, serving suggestion

Instructions

  • Start by preheating your fryer to 350 degrees F
  • Combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, creole seasoning, cayenne pepper, black pepper, and salt in a bowl using a whisk or fork. Open your bottle or can of beer and whisk in slowly. Be sure to whisk out all of the lumps that may form. Once well combined, let the batter sit for 10-15 minutes
  • Rinse and pat dry your fish. Season with light salt and pepper. Coat fish in flour so that the batter will adhere to it more easily. Once coated in flour, shake off excess and dip into your batter mixture. Be sure all of the fish is completely covered. Drop into your oil and fry for 6-8 minutes or until golden brown.
  • Remove fish and place on a wire rack or paper towel to allow potential excess grease to drip off.
  • Place between a brioche bun with some lettuce tomato and cheddar cheese. Serve and Enjoy!

Notes

I prefer to use cod because it is a thick, flaky white fish.
For the beer I prefer to use Sapporo which is a Japanese Lager that is light, crisp, and full of flavor. Perfect for this light batter.
