Breakfast Skillet

Ingredients
  

  • 2 Large Russet Potatoes Peeled and Cubed
  • 1 Medium/Large Sweet Potato Peeled and Cubed
  • 1 LB Jimmy Dean Breakfast Sausage Roll Mild
  • 1 LB Applewood Smoked Bacon Chopped
  • 1 TBSP Avocado Oil
  • 1/2 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1/2 TSP Salt
  • 1/2 TSP Pepper
  • 1/2 Medium Yellow Onion
  • 1/2 Medium Red Bell Pepper
  • 1/2 Medium Green Bell Pepper
  • 2 cloves Garlic Minced
  • Fresh Chives or Parsley Garnish (optional)

Instructions
 

  • In a large skillet, add in your chopped bacon. Crank up the heat to medium or medium high and cook the bacon for 6-8 minutes or until fully cooked. You’ll notice the bacon start to foam up a little when its nearing being done. Turn off the heat and remove the bacon from the pan onto a paper towel lined sheet or tray using a slotted spoon. Reserve about 2 Tablespoons bacon fat in the pan.
  • Now, in that same skillet, return to medium high heat and add in your breakfast sausage. Cook the breakfast sausage until brown and break up into small chunks. Once fully cooked, remove and set aside.
  • In the same skillet, over medium high heat, add your avocado oil and your Russett and sweet potatoes. You want to sear your potatoes for 4-6 minutes to allow them to brown a bit on all sides. Shake your pan or use a spoon to move the potatoes around. Once slightly browned, add in your peppers and onions and cook an additional 2-3 minutes, stirring every minute. Add in your garlic cloves and cook an additional 60 seconds or until fragrant. Add in ¼ cup of water, reduce the heat to low, and cover completely to allow the potatoes to cook. Cook the potatoes for 12-15 minutes or until fork tender.
  • Once tender, add in your garlic, onion, smoked paprika, salt, and pepper to taste. Top with your bacon and sausage and mix well to combine, being careful to not break up the potatoes. Garnish with fresh chopped chives or green onion and fresh shredded or grated cheese of your choice. SERVE AND ENJOY!
