Sweet Potato Breakfast Skillet

Indulge in a quick and hearty weekend breakfast with my savory sausage and sweet potato breakfast skillet recipe. A delicious start to your day!

What will I need for this recipe?

Russet potatoes – Russet potatoes are great for frying as they are sturdier potatoes. You can also use Yukon Gold Potatoes if you have these on hand.

Sweet potatoes – Adding sweet potatoes is a great way to add a different flair to the traditional breakfast skillet.

Jimmy Dean Breakfast Sausage Roll – Breakfast sausage is a classic in this recipe. I prefer to use the mild sausage but you can also use a spicier version.

Applewood Smoked Bacon – Bacon not only gives this dish more flavor, but when you start with the bacon then all the ingredients can cook in the bacon grease which really enhances the dish.

Avocado oil – Avocado oil has a higher smoke point so it is easier to cook with than olive oil. Additionally, it will not add uncomplimentary flavors to your dish so it is my preferred oil in the kitchen.

Seasonings – This recipe used garlic powder, onion powder, salt, and pepper to add more flavor. You can really make this dish your own so if you want to add more spice to it you can always add another seasoning like City Cajun Blackening Seasoning to add a pop of flavor.

Yellow onion – Yellow onions have a higher sugar content so they will caramelize and add a lot of flavor into your skillet.

Bell peppers – To add another texture and color into the presentation I love using red and green bell peppers. The red peppers will add a bit of sweetness and the green peppers will add a bitter taste to balance out the dish.

Garlic – Adding minced garlic will balance everything in the dish out and add a nice flavor to it.

How to make this Breakfast Skillet

Prepare all the Ingredients

In a large skillet, add in your chopped bacon. Crank up the heat to medium or medium high and cook the bacon for 6-8 minutes or until fully cooked. You’ll notice the bacon start to foam up a little when its nearing being done. Turn off the heat and remove the bacon from the pan onto a paper towel lined sheet or tray using a slotted spoon. Reserve about 2 Tablespoons bacon fat in the pan.

Cook in the Cast Iron

Now, in that same skillet, return to medium high heat and add in your breakfast sausage. Cook the breakfast sausage until brown and break up into small chunks. Once fully cooked, remove and set aside.

In the same skillet, over medium high heat, add your avocado oil and your Russett and sweet potatoes. You want to sear your potatoes for 4-6 minutes to allow them to brown a bit on all sides. Shake your pan or use a spoon to move the potatoes around. Once slightly browned, add in your peppers and onions and cook an additional 2-3 minutes, stirring every minute. Add in your garlic cloves and cook an additional 60 seconds or until fragrant. Add in ¼ cup of water, reduce the heat to low, and cover completely to allow the potatoes to cook. Cook the potatoes for 12-15 minutes or until fork tender.

Final touches

Once tender, add in your garlic, onion, smoked paprika, salt, and pepper to taste. Top with your bacon and sausage and mix well to combine, being careful to not break up the potatoes. Garnish with fresh chopped chives or green onion and fresh shredded or grated cheese of your choice. SERVE AND ENJOY!

  • 2 Large Russet Potatoes Peeled and Cubed
  • 1 Medium/Large Sweet Potato Peeled and Cubed
  • 1 LB Jimmy Dean Breakfast Sausage Roll Mild
  • 1 LB Applewood Smoked Bacon Chopped
  • 1 TBSP Avocado Oil
  • 1/2 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1/2 TSP Salt
  • 1/2 TSP Pepper
  • 1/2 Medium Yellow Onion
  • 1/2 Medium Red Bell Pepper
  • 1/2 Medium Green Bell Pepper
  • 2 cloves Garlic Minced
  • Fresh Chives or Parsley Garnish (optional)

Absolutely! This recipe is very versatile so you do not have to use bacon and breakfast sausage. You can instead use cajun andouille sausage for a different flair!
