Southern Mustard Fried Flounder

Ingredients
  

  • 4 Flounder filets 6 ounce Filets
  • 1/2 cup Yellow mustard
  • 2 large Eggs beaten
  • 1/2 cup Seasoned cornmeal (fish fry)
  • 1/4 cup flour
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper (optional but recommended

Instructions
 

  • In a medium sized bowl whisk together your eggs and mustard. Rinse ; pat dry your fish fillets. Season them and add to your mustard ; egg mixture
  • In a separate bowl, combine your flour and seasoned corn meal. 
  • Remove the fish from the wet batter, allowing excess to drip off and place into flour/cornmeal mixture. Coat and allow excess dry batter to run off.
  • Fry in 375 degree oil for 5-7 minutes depending on the size of the fish if deep frying.If shallow frying, 2-3 minutes per side.
  • Once golden brown, remove and place on paper towel lined plate to drain.
  • Serve with hot sauce, tartar sauce or whatever you prefer.
