In a medium sized bowl whisk together your eggs and mustard. Rinse ; pat dry your fish fillets. Season them and add to your mustard ; egg mixture
In a separate bowl, combine your flour and seasoned corn meal.
Remove the fish from the wet batter, allowing excess to drip off and place into flour/cornmeal mixture. Coat and allow excess dry batter to run off.
Fry in 375 degree oil for 5-7 minutes depending on the size of the fish if deep frying.If shallow frying, 2-3 minutes per side.
Once golden brown, remove and place on paper towel lined plate to drain.
Serve with hot sauce, tartar sauce or whatever you prefer.
