Cinnamon Roll Bread Pudding

Ingredients
  

  • 5 Large Eggs
  • 1 Cup Whole Milk
  • 1 Cup Evaporated milk or heavy cream
  • 1/2 Cup Light brown sugar
  • 1 1/2 Cup Sugar
  • 3 TBSP Unsalted butter Melted
  • 2 TBSP bourbon or Irish whiskey optional
  • 1 TSP Ground Cinnamon
  • 1 TSP Vanilla Extract
  • 1/2 TSP Kosher Salt
  • Mint optional for garnish
  • 6-8 Day old or slightly stale cinnamon rolls cut into bite sized pieces

Instructions
 

  • Preheat the oven to 350F.
  • In a larger bowl, whisk together your eggs. Then add the milk, sugar, brown sugar, melted butter, bourbon (optional), cinnamon, vanilla and salt. Whisk everything together until well combined.
  • Add your bread cubes to a parchment-lined (optional) baking dish and slowly pour the mixture over the bread in the prepared baking dish and let sit for at least 15 minutes up to an hour.
  • Bake for 45 to 50 minutes, or until the top is golden brown and puffy. Use a toothpick to check the center you want the toothpick to come out clean.
  • Remove for the oven and let sit for 10 minutes. You can drizzle with a simple glaze made from powdered sugar and milk if you want that extra touch of sweetness.
  • Slice and serve with vanilla ice cream and garnish with a mint (optional).
