Fried Rice

Ingredients
  

  • 2 Cups Cooked Rice Preferably Cold
  • 1 Cup Conecuh Smoked Sausage or Lap Cheong (Chinese Sausage) Diced
  • 2 TBSP Avocado Oil
  • 1 Medium Yellow Onion Chopped
  • 4-6 Cloves Garlic Minced
  • 3 Eggs Lightly Beaten
  • 1/4 Cup Low Sodium Soy Sauce
  • 2 TBSP Oyster Sauce Optional
  • 1 TBSP Sweet Chili Sauce Optional
  • 1 TSP Sesame Oil
  • 3-4 Green Onions Chopped (save greens for garnish)
  • 1 TSP Tri-Color Sesame Seeds Garnish
  • Salt & Pepper To taste

Instructions
 

  • Prepare the Rice: If you haven't already, cook the rice according to the package instructions and let it cool. Cold rice works best for fried rice as it doesn't clump together.
  • Heat the Oil: In a large skillet or wok, heat the avocado oil over medium-high heat. Add your chopped sausage and cook for 2-3 minutes or until lightly browned.
  • Cook the Aromatics: Add the chopped onion, green onion, and minced garlic to the skillet. Sauté for about 2-3 minutes until the onions become translucent and the garlic is fragrant.
  • Add the Vegetables: Toss in the broccoli and cook for another 3-4 minutes until they are tender.
  • Scramble the Eggs: Push the meat and vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until they are fully cooked, then mix them with the vegetables.
  • Add the Rice: Add the cold rice to the skillet. Break up any clumps and stir everything together.
  • Season the Rice: Pour the soy sauce, oyster sauce (if using), sweet chili, and sesame oil over the rice. Stir well to ensure the rice is evenly coated with the sauces. Cook for another 3-4 minutes until everything is heated through.
  • Finish with Green Onions & Tri-Color Sesame Seeds: Add the chopped green onions and sesame seed and give the rice one final stir. Season with salt and pepper to taste.
  • Serve: Your fried rice is ready to be served! Enjoy it as a main dish or a side.
