Fried Rice
Whip up the perfect fried rice with my go-to recipe! Whether you’re new to cooking or a pro, you’ll love how versatile this dish is.
What ingredients will I need?
Cooked Rice – Cold, cooked rice is drier, preventing sogginess and clumping in fried rice to make for a perfectly fluffy, separated texture.
Conecuh Smoked Sausage or Lap Cheong – Both Conecuh Smoked Sausage and Lap Cheong bring unique flavors to fried rice, but they have different profiles. Conecuh offers a smoky, savory Southern taste, while Lap Cheong adds a sweet, aromatic, and slightly spicy Chinese flair.
Avocado Oil – Avocado oil is a fantastic choice for fried rice because of its high smoke point. This makes it ideal for stir-frying, and its mild, buttery flavor complements a wide range of ingredients without overpowering the dish.
Yellow Onion – Yellow onion is a great addition, providing a sweet, savory base that enhances the flavor. When sautéed, it adds a subtle caramelized depth, balancing the dish with a touch of natural sweetness and a bit of crunch.
Garlic – Garlic is a must-have for fried rice, adding a rich, aromatic depth that infuses every bite. Its pungent, savory flavor creates a fragrant base that complements the other ingredients.
Eggs – Eggs add richness and texture to fried rice. They bring a subtle flavor and a protein boost, making the dish heartier and more well-rounded.
Low Sodium Soy Sauce – Low sodium soy sauce provides the classic umami flavor and it keeps the dish balanced and flavorful.
Oyster Sauce – Oyster sauce adds a rich, savory depth with its slightly sweet, umami flavor. It’s optional in the dish but if you have it in your pantry it’s a great addition.
Sweet Chili Sauce – Sweet chili sauce adds a kick to fried rice with its blend of sweetness and mild heat. It introduces a tangy, flavorful layer. It’s also optional in the dish but if you have it in your pantry it’s a great addition.
Sesame Oil – Sesame oil adds a nutty, aromatic touch enhancing its flavor with a rich, toasted essence. A little goes a long way, giving your dish that distinctive, savory finish.
Green Onions – Green onions bring a fresh, crisp bite to fried rice and they provide a vibrant contrast to the other ingredients.
Tri-Color Sesame Seeds – Tri-color sesame seeds add a crunch and visual appeal to fried rice.
How to make Fried Chicken
Prepare the Rice: If you haven’t already, cook the rice according to the package instructions and let it cool. Cold rice works best for fried rice as it doesn’t clump together.
Heat the Oil: In a large skillet or wok, heat the avocado oil over medium-high heat. Add your chopped sausage and cook for 2-3 minutes or until lightly browned.
Cook the Aromatics: Add the chopped onion, green onion, and minced garlic to the skillet. Sauté for about 2-3 minutes until the onions become translucent and the garlic is fragrant.
Add the Vegetables: Toss in the broccoli and cook for another 3-4 minutes until they are tender.
Scramble the Eggs: Push the meat and vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until they are fully cooked, then mix them with the vegetables.
Add the Rice: Add the cold rice to the skillet. Break up any clumps and stir everything together.
Season the Rice: Pour the soy sauce, oyster sauce (if using), sweet chili, and sesame oil over the rice. Stir well to ensure the rice is evenly coated with the sauces. Cook for another 3-4 minutes until everything is heated through.
Finish with Green Onions & Tri-Color Sesame Seeds: Add the chopped green onions and sesame seed and give the rice one final stir. Season with salt and pepper to taste.
Serve: Your fried rice is ready to be served! Enjoy it as a main dish or a side.

FAQ
What type of rice is best for fried rice?
Cold, day-old rice works best. It’s less sticky and helps achieve a better texture. Jasmine or long-grain rice are great choices. You can use fresh rice, but it may be too moist and clump together. If you must use fresh rice, spread it out on a baking sheet to cool and dry a bit.
Can I substitute the vegetables and/or meat in fried rice?
Absolutely! Chicken, pork, beef, or shrimp are great options. You can also substitute the vegetables with peas, carrots, corn, bell peppers, or green beans. Feel free to add any vegetables you have on hand! A great example of this is Crab Fried Rice.
How do you store leftover fried rice?
Transfer the rice to airtight containers or resealable plastic bags and it can be stored in the refrigerator for up to 4 days, or freeze for up to 3 months for longer storage.
