Parmesan Crusted Lamb Chops

Ingredients
  

  • 6 Lamb Chops
  • 1/4 Cup Parmesan Cheese Grated
  • 1/2 Cup Panko Breadcrumbs
  • 1 TSP Rosemary Dried
  • 1 TSP Smoked Paprika
  • 1 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1 TSP Thyme Dried
  • Salt & Pepper To taste
  • 2 TBSP Avocado Oil
  • 4 OZ Monterey Jack Cheese

Sofrito

  • 2 Bunches Cilantro
  • 1 Bunch Parsley
  • 1 Small Yellow Onion
  • 6 Cloves Garlic Minced
  • 1 Lime Juice Juice from 1 Lime
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 1/2 TSP Kosher Salt

Parmesan Ranch Mixture

  • 1/2 Cup Parmesan Cheese
  • 3/4 Cup Ranch Dressing
  • 2-3 OZ Monterey Jack Cheese Shredded

Instructions
 

Prepare Sofrito

  • Blend all items together in blender or pulse in a food processor. Pulse until all ingredients are well blended

Prepare Parmesan Ranch Mixture

  • Combine all ingredients in a small bowl. Mixture should be thick and not too loose

Prepare Lamb Chops

  • Preheat your oven to 425°F (200°C)
  • In a bowl, mix together 1/4 cup of the grated Parmesan cheese, breadcrumbs, dried rosemary, dried thyme, salt, pepper and 1 teaspoon avocado or olive oil
  • Place the lamb chops in a large bowl and cover completely with the sofrito and add your remaining seasonings. Mix well to coat lamb chops, cover and set in fridge to marinate at least 30 minutes
  • Heat a skillet over medium-high heat and add a little avocado or olive oil
  • Sear the lamb chops for about 2-3 minutes on each side until they develop a golden crust. Remove and set aside on a wire rack
  • Transfer the lamb chops to a baking sheet and cover with cheese ranch mixture. Next, top the lamb chops off with Parmesan breadcrumb mixture
  • Place in the oven and bake for about 8-10 minutes for medium-rare, or adjust the cooking time according to your desired level of doneness. The cheese will be melted and the crust on top will be brown and toasted
  • Remove the lamb chops from the oven and let them rest for a few minutes before serving
