How to make Parmesan Crusted Lamb Chops
Prepare The Sofrito
Blend all items together in blender or pulse in a food processor. Pulse until all ingredients are well blended.
Prepare The Lamb Chops
Preheat your oven to 425°F (200°C)
In a bowl, mix together 1/4 cup of the grated Parmesan cheese, breadcrumbs, dried rosemary, dried thyme, salt, pepper and 1 teaspoon avocado or olive oil
Place the lamb chops in a large bowl and cover completely with the Sofrito and add your remaining seasonings. Mix well to coat lamb chops, cover and set in fridge to marinate at least 30 minutes
Heat a skillet over medium-high heat and add a little avocado or olive oil
Sear the lamb chops for about 2-3 minutes on each side until they develop a golden crust. Remove and set aside on a wire rack
Prepare Parmesan Ranch Mixture
Blend all items together in blender or pulse in a food processor. Pulse until all ingredients are well blended
Transfer the lamb chops to a baking sheet and cover with cheese ranch mixture. Next, top the lamb chops off with Parmesan breadcrumb mixture
Bake the Lamb Chops
Place in the oven and bake for about 8-10 minutes for medium-rare, or adjust the cooking time according to your desired level of doneness. The cheese will be melted and the crust on top will be brown and toasted
Remove the lamb chops from the oven and let them rest for a few minutes before serving

- 1/4 Cup Parmesan Cheese Grated
- 1/2 Cup Panko Breadcrumbs
- 1 TSP Rosemary Dried
- 1 TSP Smoked Paprika
- 1 TSP Garlic Powder

- 1 TSP Thyme Dried
- Salt & Pepper To taste
- 2 TBSP Avocado Oil
- 4 OZ Monterey Jack Cheese
Sofrito
- 2 Bunches Cilantro
- 1 Bunch Parsley
- 1 Small Yellow Onion
- 6 Cloves Garlic Minced
- 1 Lime Juice Juice from 1 Lime
- 1/2 Green Bell Pepper
- 1/2 Red Bell Pepper
- 1/2 TSP Kosher Salt
Parmesan Ranch Mixture
- 1/2 Cup Parmesan Cheese
- 3/4 Cup Ranch Dressing
- 2-3 OZ Monterey Jack Cheese Shredded
Instructions
Prepare Sofrito
- Blend all items together in blender or pulse in a food processor. Pulse until all ingredients are well blended
