Blackstone Jalapeño Bacon Jam Smash Burger
Fire up the Blackstone for the ultimate Jalapeño Bacon Jam Smash Burger! Juicy beef, crispy edges, smoky bacon jam, and spicy jalapeños make this burger unforgettable.
What will I need for this recipe?
For the Burgers
- 2 lbs 80/20 ground beef
- 1 yellow onion, thinly sliced
- 2-3 jalapeños, sliced
- Morton Nature’s Seasoning (or your favorite all-purpose seasoning)
- 6 brioche buns
For the Jalapeño Bacon Jam
- 8 oz beef bacon, diced
- 1 medium yellow onion, diced
- 2 jalapeños, diced
- 1 tbsp Cajun seasoning
- 1/4 cup brown sugar
- 2 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
For the Burger Sauce
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tsp hot sauce
- 1 tsp Worcestershire sauce
- 2 tbsp sweet relish
- 1 tbsp Nature’s Seasoning
How to make Blackstone Jalapeño Bacon Jam Smash Burger
Step 1: Make the Jalapeño Bacon Jam
- Remove from heat and set aside.
- Heat a skillet over medium heat and cook the diced beef bacon until it begins to crisp.
- Add the diced onions and jalapeños and cook until softened.
- Stir in the Cajun seasoning, brown sugar, balsamic vinegar, and Worcestershire sauce.
- Continue cooking, stirring occasionally, until the mixture reduces and becomes thick, sticky, and jam-like.

Step 2: Make the Burger Sauce
- Mix until smooth and refrigerate until ready to use.
- Combine mayonnaise, ketchup, mustard, hot sauce, Worcestershire sauce, sweet relish, and Nature’s Seasoning in a bowl.
Step 3: Cook the Smash Burgers
- Preheat your Blackstone or flat top griddle over medium-high heat.
- Divide the ground beef into 8 equal balls.
- Place the beef balls onto the hot griddle and top with sliced onions and jalapeños.
- Smash each burger thin using a burger press or spatula.
- Season generously with Nature’s Seasoning
- Cook until the edges are crispy, then flip and cook for another 1-2 minutes.
Step 4: Toast the Buns
- Lightly butter the brioche buns if desired.
- Toast on the griddle until golden brown.
Step 5: Build the Burger
- Spread a generous amount of burger sauce on the bottom bun.
- Stack two smash patties.
- Top with a spoonful of jalapeño bacon jam.
- Add the top bun and serve immediately.
