Chicken Tortellini Soup

This creamy Chicken Tortellini Soup recipe is a comforting blend of cheesy tortellini, hearty veggies, and juicy chicken! It’s easy to make a bowl of this cozy soup and is perfect for fall or winter.

What will I need for this recipe?

Chicken Breasts – Chicken breasts are arguably the most versatile to use. As they cook in the broth of this soup they break down and become easy to shred which gives each bite a taste of juicy chicken.

Chicken Broth – This recipe is very much an upscale chicken noodle soup! You can opt for vegetable broth if you have this on hand, but chicken broth will add the most flavor into the soup.

Yellow Onion, Celery, and Carrots – The combination of these three vegetables creates a beautiful mirepoix that most soups start out as. As these vegetables cook down it enhances the flavors of the soup.

Five Cheese Tortellini – You can use any type of tortellini that you prefer, but our favorite is the five cheese! You cannot go wrong by adding a cheesy element into each bite.

Seasonings – This soup brings together Italian Seasoning, All-Purpose Seasoning, Smoked Paprika, Salt and Pepper To Taste. It’s a simple blend of spices but it really adds to the base.

Fresh Parsley – Not only is parsley great for presentation but it adds a flavorful note to the soup.

Parmesan Cheese – The parmesan melts into this soup and brings a sharp flavor to the broth.

Heavy Cream – Heavy cream brings the broth together and makes it rich.

Rosemary and Thyme – These herbs have a strong flavor that pairs well with this dish. They add a savory element that enhances the taste of the chicken.

How to make Chicken Tortellini Soup?

Sear the chicken

First, start by rubbing your chicken breasts with about a teaspoon of avocado oil and season with 1 teaspoon of your all-purpose seasoning

Place a large pot over medium heat and add a couple of tablespoons of avocado oil.  Place your chicken in the pot and sear on both sides for 2-3 minutes. Remove and set aside. Next, add in your chopped yellow onion and sauté  for 3 minutes to soften. Then add the chopped bell pepper, carrots, and garlic. Sauté for another 3 minutes.

Build your base

Next, add in your chicken breasts, chicken broth, Italian seasoning, all-purpose seasoning, smoked paprika, rosemary, and thyme. Bring to a boil, then lower the heat to medium-low and simmer for 15 minutes, or until the chicken is cooked through. Remove the chicken and shred it. Set aside.

Cook the tortellini

Crank the heat back up to medium and add your water as the broth may have reduced significantly and bring it back to a boil. Once boiling, add in your cheese tortellini. Cook for about 6-8 minutes or until fully cooked. Follow package instructions for the exact cooking time.

Bring it all together

Once the tortellini is cooked through, turn off the heat. Stir in your heavy cream and add your fresh chopped parsley and parmesan cheese. Add the shredded chicken back in. Taste and adjust seasoning, as needed. Garnish with crushed red pepper, optional. SERVE AND ENJOY!

  • 2 Boneless, Skinless Chicken Breasts
  • 64 OZ Chicken Broth
  • 1 Medium Yellow Onion Diced
  • 1 Red Bell Pepper Diced
  • 3 Stalks Celery Chopped
  • 2 Large Carrots Chopped
  • 20 OZ Five Cheese Tortellini
  • 2-3 Cups Water
  • 3 TSP Italian Seasoning
  • 2 TSP All-Purpose Seasoning
  • 1 TSP Smoked Paprika
  • Salt and Pepper To Taste
  • 1/4 Cup Fresh Parsley Chopped
  • 1/4 Cup Parmesan Cheese Freshly Grated
  • 1/4 Cup Heavy Cream
  • 2 Sprigs Rosemary
  • 2 Sprigs Thyme

Absolutely! You can add all the ingredients to your slow cooker, except for the tortellini, and cook on low for 6-8 hours or high for 3-4 hours. When cooked through, add your cooked tortellini and serve!
