Smothered Green Beans: A hearty side dish that’s perfect for family dinners, holidays, or any comfort-food craving!

What will I need for this recipe?

Green Beans – Fresh green beans add vibrant color, a crisp-tender texture, and earthy flavor, perfectly balancing the smoky, savory richness of the bacon and andouille sausage.

Andouille Sausage – Andouille sausage brings bold, smoky flavor with a hint of spice.

Center Cut Bacon – Center cut bacon adds smoky richness and crispy texture to compliment the hearty green beans and potatoes.

Small Onion – Onion adds a subtle sweetness and depth of flavor to enhance the richness of the broth.

Garlic – Garlic infuses the dish with aromatic, savory notes.

Chicken Broth – Chicken broth provides a savory, flavorful base that ties the ingredients together.

Russet Potatoes -Russet potatoes add hearty texture and absorb the flavorful broth, making the dish more filling.

Seasoning – For this recipe I use a combination of Cajun Seasoning, Nature’s Seasoning, Salt & Pepper.

How to make Parmesan Crusted Chicken

In a large pot or Dutch oven, add in your chopped bacon into a cold pan and allow bacon to fully cook. Remove the bacon and set aside in a medium bowl.

Next, add the andouille sausage slices and cook until browned, about 5 minutes.

Remove the sausage from the skillet and set aside with the bacon.

Reduce heat to low and in the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for another minute. Then, add in 2 tablespoons of flour and whisk until flour is cooked out, about 60 seconds. Add your chicken broth in and stir to ensure there are no lumps from the flour. Bring broth to a boil.

Add the green beans to the skillet and stir to combine with the onion and garlic and broth. Be sure to add more broth if needed to cover the green beans.

Reduce the heat to low and allow to simmer.

Cover and cook for about 15-20 minutes, or until the green beans are tender. Season green beans with Cajun seasoning and all purpose seasoning being sure to taste and adjust. Add in your potatoes and allow to cook until potatoes are fork tender.

Return the andouille sausage and bacon to the skillet and stir to combine. SERVE AND ENJOY!

  • 2 Cloves Garlic Minced

  • 6 Medium Russet Potatoes Peeled & Cubed into 1 inch pieces
  • 1/2 TSP Cajun Seasoning
  • 1 TSP Nature's Seasoning All Purpose Seasoning
  • Salt & Pepper To Taste

    The recipe is a bit confusing. You say to add the bacon to a dutch oven and cook. Then you talk about using a skillet. I’m not sure all these ingredients will fit into a skillet. I will use a large pot as you suggested and look forward to making this for Christmas side along with our ham.
